Named after Bainbridge Island's infamous 1860s era Whiskey Forty Saloon our first bourbon weighs in at a full Bottled In Bond 100 Proof and has an organic mashbill of 60% heirloom corn, 25% old variety triticale (a rye-wheat hybrid) and 15% soft white wheat, all grown right here in Washington state. Our Whiskey Forty Saloon bourbon has been aged for 5 1/2 years in prime new No. 3 char 53 gallon American white oak barrels. This whiskey has delicious notes of rye and corn, with notes of cherry, vanilla, citrus and caramel and just a lick of fresh char.
This well-rounded whiskey displays notes of brioche, golden raisin, and chocolate on the nose. The high level of alcohol is well masked by the round structure and complex flavors of roasted sunflower seeds, baking spice, and vanilla. Long-lasting.
